Carrot Casserole

  • 8 carrots cut lengthwise
  • 1/2 cup mayo
  • 1 Tablespoon horseradish
  • 1 Tablespoon minced onion
  • breadcrumbs or cracker crumbs
  • 1 Tablespoon butter
  • parsley

Boil carrots till just tender - drain, save 1/4 cup liquid.

Mix the mayo, horseradish and onion.

Place the carrots in casserole dish, pour the mixture over the carrots, sprinkle with breadcrumbs or cracker crumbs, butter and parsley.

Bake at 320 ° for 20-30 minutes.
